Dairy free, egg free and oil free vegan oatmeal banana cookies…….what could be better?!?
Oatmeal banana cookies are my favorite quilt-free cookies. I may or may not have been known to eat a whole batch by myself. They make a great option for a quick on the go breakfast, middle of the day snack or a yummy dessert. A great thing about these cookies is that they freeze really well, so go ahead and make up a ton of batches when you have some ripe bananas you need to use up and just pull some out of the freezer when you are craving something delicious.
The key to some delicious oatmeal banana cookies is some ripe bananas. As bananas ripen their starch is broken down into sugar making them sweeter. Bananas also have higher levels of antioxidants as they ripen. So make sure you use some spotty bananas!
Not only are these cookies amazingly yummy they are also super easy to make. You just mix everything up together, spoon onto a baking sheet and bake. The recipe is very easy to modify if you wanted to. You can easily throw in some other ingredients to up the nutritional content such as raisins, dried cranberries, chopped up dates and nuts. You can even throw in some vegan chocolate chips if you feel like being a rebel.

- 3 ripe bananas
- 2 cups oats
- 1/4 cup almond milk or any plant based milk
- 1/3 cup applesauce
- 1 tsp cinnamon
- 1 tsp vanilla
- Preheat oven to 350 degrees.
- Mash up bananas in large bowl.
- Add the rest of the ingredients and stir.
- Line a baking sheet with parchment paper.
- Place a spoonful of the mixture on to the baking sheet and form into a cookie shape. Continue until you use up all of the mixture.
- Bake at 350 degrees for 15-20 minutes.
